In The Sopranos, where seasonal later, Tony had this young Italian boy executioner …. about 35 years old … He often made a meal of spaghetti or pasta, and he would crack 2-3 eggs in the bowl and mix everything. Can anyone give me the finer details of this recipe? This seems simple, but do not know all the details, so I will not spoil it.
Ingredients: 4 eggs 3 tablespoons milk (fat, low fat or regular) 1 / 4 to 1 / 3 cup of cheese (Parmesan, Cheddar or Romano) 10 oz spaghetti or any pasta (for eg rigate penne, farfalle or fusilli) 2 teaspoons extra virgin olive oil or butter Salt and black pepper to taste optional ingredients (mix and match to taste) 1 / 4 cup chopped smoked salmon 1 / 3 cup chopped tomato 1 / 2 teaspoon garlic grated 1 / 4 cup chopped chives and sweet onion 1 / 4 cup chopped fresh herbs mixed parsley, basil, chives, cilantro and oregano Directions: Fill a large pot with water and boil. Meanwhile, break eggs into a size medium mixing bowl and beat with a fork. Add milk and cheese and beat again. Add any optional ingredients you want and beat again. Cook the pasta according to package directions. Quickly drain the pasta in a colander. While the pasta is in the colander, put back into the pot from the stove and add olive oil or butter. Toss the pasta back into pot and add the egg mixture. Turn the heat as low as it goes, and stir with a wooden spoon until the pasta is coated with a sauce creamy. Season with salt and pepper. Remove from heat and serve immediately.
