italian recipe spaghetti meatballs
Recipe for spaghetti bolognese
Makes 4 servings
Ingredients
1 pound ground beef
Olive oil
2 inch piece finely chopped celery
2 inch piece of carrot, finely chopped
1 medium onion, finely chopped
2 cloves garlic, sliced
The leaves half a sprig of fresh rosemary, and about 6-8 sage leaves
1 bay leaf
1 can tomatoes
1 tablespoon tomato paste
Salt and pepper
A little white wine or water
Method
1. Saute the celery, carrot and onion in a good splash of olive oil. Keep the heat, do not want browned. This should take about 15 minutes – stirring occasionally so it does not brown too quickly. Add the garlic, chopped rosemary and sage and cook for another 5 minutes or 10, stirring occasionally.
2. Add meat, raise heat to medium and fry, stirring and breaking up meat with wooden spoon. When color is added bay leaf, tomatoes, purée and white wine or water. Season with salt and pepper – do not put too much, you can taste and see later if needed.
3. Put the lid on – if not quite adjusted in line with foil to keep moisture in Cook, at the lowest possible heat for 45 minutes to an hour, stirring every 15 minutes, adding a little water if needed. The steam will help keep moisture from the meat and plump.
4. Cook pasta in lots boiling salted water. When dente, drain the spaghetti, put it in a large bowl and pour the sauce enough to cover the top when pulled.
