Good Italian Chicken Recipes?
Ok, I love Italian food, and i love chicken, so what are some authentic Italian recipes based chicken. EXCEPTION: Veal Marsala Chicken Marsala Chicken Parm or something too heavy on the pasta. Thank you!
This is a good recipe for chicken caccitore. It is quick but good! Ingredients 1 tablespoon garlic oil 75g / 2 ½ oz pancetta cubes 6 spring onions, finely chopped 1 teaspoon finely chopped fresh rosemary 500g/1lb boneless chicken and thighs, diced ½ teaspoon celery salt 125ml / 4 ½ fl oz white wine 1 x 400g/14oz can chopped tomatoes 2 bay leaves ½ teaspoon sugar 1 x 400g/14oz can cannellini beans, rinsed and drained (optional) Method 1. Heat the garlic oil in a pan and fry the bacon, onion and rosemary for 2-3 minutes. 2. Add chicken pieces, sprinkle celery salt and mix well. 3. Pour in wine and bring to a simmer, then add the tomatoes, bay leaves and sugar. Cover with a lid and let simmer 20 minutes. 4. Add the drained cannellini beans, if using, and simmer until beans are heated through and the chicken is cooked. 5. To serve, divide among four serving plates.
